Golden Date Cookies

Dry Ingredients:

1 1/4 c Gluten-Free Cookie Flour Medley 
1/2 c Corn Meal
1/2 tsp Xanthan Gum
1/2 tsp Baking Soda
2 tsp Baking Powder
1/4 tsp Salt

Wet Ingredients:

1/2 c Coconut Sugar
1/4 c Agave (or Honey)
1/4 c Butter
1/4 c Coconut Oil
4-6 Diced Dates

Directions:

Heat oven to 350°.

Whisk the dry ingredients together in a bowl. Set aside. In a pan, heat the coconut oil and the chopped up dates (the consistency should be almost like syrup). In a separate bowl, mix the butter and the two sugars. When blended, add in the oil and dates. Mix together until a paste forms.

Slowly add in the dry mixture to the wet mixture, continuing to stir. When dough forms, take a teaspoon and scoop the dough to place cookies on a tray.

Bake 8-10 minutes, or until golden brown.
